Carob (Ceratonia siliqua L.)
The carob is the fruit of the carob tree, an evergreen, hardy, and long-lived plant capable of thriving in arid and nutrient-poor soils, even under harsh climatic conditions. The carob tree (Ceratonia siliqua) belongs to the Fabaceae or Leguminosae family and is typical of the Mediterranean scrub, especially in Sicily.
Carob has a flavor similar to chocolate and, from a nutritional standpoint, represents a healthier alternative since it is high in dietary fiber, rich in antioxidants, and low in fat. Carob pulp is naturally sweet, containing mainly sucrose, glucose, and fructose, along with polyphenols (tannins, flavonoids, phenolic acids) and essential minerals (K, Ca, Mg, Na, Cu, Fe, Mn, Zn).
Carob Powder
To obtain carob powder, the pulp is separated from the seeds, then roasted and finely micronized. By controlling the roasting temperature and duration, different types of carob pulp powder can be obtained, each with unique organoleptic properties and color.
