Caper (Capparis spinosa L.)
Capers, which are the unopened buds of the plant, are a low-fat food rich in dietary fiber. Nutritionally, capers contain B vitamins, particularly folic acid, as well as vitamins A and K. Among the minerals, iron, calcium, magnesium, manganese, phosphorus, and especially sodium should be mentioned, particularly in salt-preserved forms. Capers are rich in substances that are strategic for our health, most notably flavonoids, which are known for their anti-inflammatory and antithrombotic functions, and their ability to intervene in cholesterol metabolism, helping regulate blood cholesterol levels. Among the bioflavonoids present in capers, quercetin stands out for its antibacterial and immunomodulatory actions, its ability to restore the integrity of compromised intestinal barriers, and its protective role in cartilage health, promoting the regeneration of chondrocytes and synovial fluid. More generally, it helps counter the development of inflammatory conditions that may progress to arthritis and osteoarthritis.
Amaranth (Amaranthus caudatus L.)
Amaranth is a plant known for its numerous beneficial properties. It is not a cereal but is more accurately described as a "pseudocereal," and it provides a complete source of proteins, essential for the growth and maintenance of the human body.
