The carob tree (Ceratonia siliqua) is an evergreen fruit tree belonging to the Leguminosae or Fabaceae family, known for its slow growth and remarkable longevity. Its fruits contain numerous dark, shiny seeds that are round and slightly flattened, uniform in size and weight. These seeds were historically referred to as “carats” (from the Greek keràtion and the Arabic kirat, meaning seed), as they were once used as a unit of weight for gold and precious stones.
Carob seeds are an excellent source of fiber, useful for regulating intestinal transit. They are also rich in minerals (calcium, iron, magnesium, phosphorus), vitamins (B3, A, and E), and phenolic compounds.
The main use of carob seeds is the production of carob seed powder (carob gum). The powder is obtained by milling the endosperm layer after decortication, resulting in a white powder composed primarily of a high-molecular-weight hydrocolloid polysaccharide formed by galactose and mannose units linked through glycosidic bonds, chemically defined as galactomannan.
Galactomannan from carob exhibits gelling properties that support digestion and weight control. Its main benefits include a satiating effect due to the gel that slows gastric emptying, potential reduction of cholesterol and triglyceride levels, and regulation of blood glucose thanks to its ability to bind water.
