Watermelon (Citrullus lanatus (Thumb) Matsum et Nakai)
This fruit, in addition to containing several vitamins and minerals in appreciable quantities, is a good source of vitamin C. The red coloration of watermelon is due to the presence of carotenoids, particularly lycopene and beta-carotene, which, along with other bioactive compounds present in watermelon, give the fruit high nutritional potential and numerous health benefits. Watermelon is the richest dietary source of citrulline, a non-essential amino acid that serves as a precursor for the synthesis of L-arginine, an essential amino acid crucial for protein synthesis. This compound is particularly concentrated in the white rind surrounding the fruit's flesh. Numerous studies have shown that citrulline offers various health benefits, including blood pressure reduction, decreased risk of cardiovascular diseases, improvement in age-related conditions, promotion of metabolic health, and reduction of post-exercise muscle soreness.
Amaranth (Amaranthus caudatus L.)
